The Whiskey Chancer – Volume 1.

The Innishannon House Hotel 'Whiskey Snug', Whiskey Diaries, Volume 1.

Redbreast 12 yr old.

Daylight hours are steadily dwindling. The autumn equinox is upon us, this year it falls on September 23rd, where day and night will be roughly equal. Time to think of turf and block fires, slippers kicked off and a damned good whiskey in hand. I like my whiskey and it has to be Irish. I have been tasked to give a layman’s view of the best Irish whiskeys we serve and the research is a mighty pleasure. I’m no connoisseur but I certainly know what I like.

To begin with I have chosen Redbreast 12 yr old. One of the most decorated Irish whiskeys. Redbreast is the largest selling single pot still Irish whiskey in the world. Full of aromas and flavors in oloroso sherry casks giving the Christmas cake character. One of my all time favorite whiskeys. This is a marvelous whiskey, beautifully balanced with a warm, generous texture, sweet flavors with a spicy kick and I reckon one of the finer Irish whiskeys available. Certainly one of my all time favorites.

Try it neat. It will warm the cockles of your heart.

A real beauty.

Talk to you soon, I’m off for a little more research and I think I’m going to enjoy this weekly article. Margaret can’t give out to me for drinking, after all, you’ve guessed it, it’s just research!
